I'm sure there are better out there but this has just become an essential part of my toolkit.

pcapsipdump

That little beauty will dump the SIP+RTP but a different file for each individual call. You can also specify a number so it will only dump calls to that number. A brilliant way isolate calls even on a busy server.

Then just load the file into wireshark and away you go :)
